Color and Bubbles: Pale yellow color. Discreet and regular effervescence of which fine bubbles form a delicate bead of foam.

Aroma: Rich and fresh nose with a nice complexity on exotic and lemony fruit aromas. A light finish with pear and mint. 

Palate: A dominant freshness marked by the lemony aromas announced in the nose. The presence of exotic fruits enhances the aromatic freshness.
Food Pairing

This seductive wine goes well with the flavors of the sea like a poached halibut back, parsnip mousseline, langoustine emulsion. As well as just-seared scallops, grapefruit vinaigrette, butternut brunoise. At the end of the meal, it goes perfectly with a variety of cheeses such as Saint-Félicien or Parmesan aged 24 months or more.

Champagne celebrating every generation

The house of Patrick Boivin celebrated its 40th anniversary in 2019. It is located in Epernay, the capital of Champagne. The estate is now run by Marie-Madeleine, Patrick, accompanied by their two daughters, Baptistine and Céline. Generations of women have played a crucial role in the longevity and prosperity of the House. This continuity between generations testifies to our respect for the past and our commitment to the future.

A 6-hectare vineyard, a UNESCO World Heritage Site, is proudly home to the three ancestral grape varieties of Champagne. The grape varieties are distributed as follows : 35% Chardonnay, 40% Pinot Meunier and 25% Pinot Noir. Slopes, which are around 40 years old, enjoy favourable exposure and rest on a clay-limestone subsoil, giving our cuvées a distinctive minerality and exceptional roundness. Our vines are located in the villages of Cumières, Pierry, Epernay, Brugny-Vaudancourt and Vinay, some of which are classified as Premier Cru.
